For those of you who don’t know, we have put together a very special evening for you this summer and we call it “Wine Wednesday”.  The best part is that it is EVERY Wednesday this summer.  Make a habit of visiting us each Wednesday for a special offering of a three course tasting menu.  There are two new menus to choose from each week.  One menu is paired with white wines and the other is paired with red wines.  We have been pleasantly surprised by the interest in the early going.  It feels like this could build a lot of momentum.  The guests last week were not only raving about the food and wine but raving about the value.   That is something that we aim to provide each and every night.  If you have been to many restaurants lately, you know there is not much value out there for food you actually remember eating!

Here is what we have for you to start June off with a delicious bang:

White Wine Pairing Menu

1st course : Poached Salmon and Cucumber Salad with Luvaggio Vermantino

2nd course: Jumbo Shrimp, Red Rice, Grilled Pineapple Picante  with La Frenynelle Bordeaux

3rd course: Ashley Farms Chicken, Quinoa, Chimichurri with Domaine Antugnac Chardonnay

Red Wine Pairing Menu

1st course: Selection of Fruit and Cheeses with Campus Oaks Zinfandel

2nd course: Seared Tuna, Polenta, Tomato Saffron Sauce with Cetamura Chianti

3rd course: Beef Stoganoff Pastry with Valle Escondido Malbec

Pretty tough decision, huh?  Well in addition to these great specials, all these wines are discounted 20% on bottle purchases.  If you would like another wine, take 10% off any bottle in the house!  What a deal.  A great opportunity to try one of our more expensive bottles at a reduced rate.  Caymus, Silver Oak, Forman, Grgrich Hills are all great bottle selections that will save you some money on Wednesday nights.

Come out and enjoy the best deal around and try some wines you haven’t had a chance to try yet.  I think you will have as much fun as we do putting this event together.

Our Local Coffee Roaster

We are very fortunate to have yet another great local supplier for our resort, Honduras Coffee.  Dale Firebaugh is the owner of the Stuart, Virginia based company.  He owns coffee fields in Honduras which produce some very highly rated beans.  It is very unique for someone to own coffee fields and then to have storefront property in the states.  That’s one of the things that makes Dale special.  Unlike most coffee roasting operations, he actually gets to see the beans on the plant.  He can actually see the beans complete life cycle.  That is very rare indeed.  Of course Dale also uses other coffee beans to blend or to create different flavor profiles.  He has a wide range of coffee flavors to suit any coffee drinkers tastes.  Dale made a blend that really meets the expectations of our guests.  The Olde Mill coffee blend has a rich flavor without the bitter aftertaste you may get from a brew with similar boldness.  It is really a great balance.

Fresh Fish for You

People often ask me where I get such delicious seafood up here in the mountains.  I would like to share with you where I get my beautiful sushi grade fish.  It comes from Honolulu Fish.  My sales rep is Rod Espinoza.  He is as knowledgeable as they come when you talk about Pacific seafood.  He gives me a call when the fish hit the shores of Hawaii and we then talk about the catch of the day.  Last week it was Tazmanian King salmon, this week it is opah and next week, well, who knows!  What I do know is that it will be the freshest fish available!
Honolulu fish ices the fish in a temperature controlled box and ships the fish to me in under 24 hours time.  It is actually far fresher than I can get any seafood here on the Atlantic coast.  Another great thing about Honolulu Fish is that they use long line fishing techniques.  This, coupled with circle hooks, prevent other fish and sea turtles from being accidentally hooked.  We can all agree that that is a good thing for our environment.  There is a lot of needless damage done to sea life by nets and reckless fisherman.  Honolulu fish has gone to great lengths to protect that sea life so that it will be sustainable for decades to come.
So next time you are enjoying some rare seared tuna or Japanese seabass at Olde Mill, think about how lucky we are to have a quality, caring fish monger like Rod at Honolulu Fish.

Always Lots to Do at Olde Mill

We have had a very exciting beginning to our season thus far!  We have been really ramping up for a busy and fun filled year.  It has been a real treat meeting so many new faces from all over the continent.  What a diverse group we attract.  We have been on such a roll in the restaurant with Easter blazing the way, followed by the hugely successful Budbreak wine festival, where we won silver medal in the premium red division, then Mother’s Day Brunch and now we are on to Seafood Night this Friday! Coupled with the great golfing weather and the sweet sounds of local musicians, you just can’t beat this feeling.

We hope to see you out for our first seafood buffet this Friday and then get ready for our “Wine Wednesdays” to soon follow.  We will also be opening the Tavern for lunch on Saturdays and Sundays in our peak season.  Just so many ways to enjoy our services.  And as always, everyone is welcome!  Bring a friend and introduce them to the lifestyle of mountain living.  They will thank you.
